My Morning Coffee :: Spinach & Fruit Smoothie

My 9 month old is teething.  Oh is he ever!

It’s very early in the morning, and he’s sucking and biting on a string cheese. It sure works heck of a lot better that the Sophie the Giraffe toy I bought.  I want to share with you my version of coffee (although clearly much healthier) and then hopefully we can both go back to bed!

My Morning Coffee :: Spinach & Fruit Smoothie 

I don’t drink coffee. I never have, although sometimes (like this morning, for instance) I wish I did.

I really like smoothies for a couple reasons. There is something about the texture (cold, creamy, ice-cream like, maybe?) that I really love, but also, the nutrients are so rich and healthy, I instantly feel better and — healthier! Really, I swear it’s an immediate affect. I feel like the spinach gives me some energy too, which is just what I need some (every) mornings!

There are tons and tons variations and ways you can make smoothies. Mine is very simple and easy.

First, I add about two big handfulls of spinach.

I get the tub at Costco. I think it’s less than $4. I promise you cannot taste the spinach. Trust me, if you could, I wouldn’t be eating it!

Next, about 1/2 – 1 cup of milk.

I’ve found that it’s works best – at least with my blender – if you blend the spinach and milk first and then go on to add the rest of the fruit. It can get a little “thick” with all the leafy greens.

Then I add a banana and 1/2 cup of strawberries or mixed berries. 

I’ll throw in a splash of flax oil too.

I personally love the mix of berries the best.

Sometimes I’ll even add two bananas or a scoop of protein powder if it’s after a workout.

Love me some smoothies!

Lucas also freakishly loooooves these things too. Little does he know he’s eating spinach!

With enough fruit, they turn out a pretty color, despite all the spinach.

Seriously Yum.

  • 1-2 handfuls of spinach
  • 1/2 cup – 1 cup of milk
  • 1- 2 bananas
  • 1/2 cup of mixed berries or  5 – 7 large strawberries
  • Flax Oil if you have it — or any other vitamins you want to throw in there!
Make it. Drink it. Love it. Go on and be merry.

  1. I read your blog all the time and just have to say I love your posts! I hate coffee, but there have been many times that I wished I liked it. For one the iced drinks with whipped cream on top look like they should be yummy. Also, sometimes I wish could drink it to wake up when my 2 year old thinks the sun is his alarm clock 🙂

  2. I drink something like this almost every day! Except I add carrots and cucumber to mine as well. I don't add flax oil but will have to get some! 🙂 Oh, and I also add yogurt. Pretty much anything goes, and the banana and berries cover the taste of everything, it's awesome. 🙂

  3. Just tried spinach in our smoothie for the first time. I loved it, and Ingrid drank the whole thing even while saying she didn't like spinach 🙂

    I LOVE coffee, though, and you should consider yourself lucky not to have that addiction. Seriously feel like a drug addict in the morning!

  4. I should try adding spinach to my smoothies. Smoothies have been a morning staple this pregnancy b/c coffee made me sick in the beginning and now I get to jittery.
