I just baked my first ever batch of cookies entirely from scratch! And the best part, they actually turned out really good! My friend gaves us a huge zucchini, so I searched online for a simple yet healthy recipe. I found this one from Animal, Vegetable, Miracle. The ingredient list wasn’t too long and it sounded rather easy, so I thought I would give it a try.
First, I had to get out all the Ingredients:
1 egg Beaten
1/2 cup butter
1/3 cup brown sugar
1/3 cup honey
1 tbsp. vanilla extract
Mix together in bowl.
1 cup white flour
1 cup whole wheat flour
(Instead of using 1 cup of white flour, I subbed it for whole wheat flour. So I used two cups of whole wheat flour total.)
1/2tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
Stir together then add with other bowl:
1 cup shredded zucchini
12 oz chocolate chip
At this point, I was a little nervous and questioning my baking abilities. I know it might not seem like a big deal to many of you cookers and bakers out there, but listen to me. I don’t like cooking and believe me when I tell you this is the first time in my life I have cooked something entirely from scratch. (Actually, I’ve cooked dinners from scratched but haven’t baked anything like cookies from scratch. There’s a difference, isn’t there?) But really, how hard can it be?
At a 350 oven, bake cookies for 10-15 minutes. Mine came out perfect right at 10 minutes, but my rack is rather low in the oven right now.
I waited for them to cool and then the moment of truth…. I ate one.
Oh my gosh, they are actually good!!
I’m so excited! Go me. Cookies that are made our ingredients that I can pronounce and have hidden vegetables. Okay, one hidden vegetable. But it’s green so I think it counts as double points. Boo YAH.
