Pumpkin Chocolate Chip Cookies

I made these cookies a couple weeks ago, and they were so good I made a double batch today! I put half in the freezer and the rest I’m giving to friends and co-workers. They are so so so good! At least, I really think so. 🙂 I have to get them out of my house as soon as possible otherwise I’ll eat them all.

I got the recipe from here

½ cup shortening
1 cup sugar
1 cup pumpkin puree
1 tsp vanilla extract
2 cups flour
¼ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 ½ cups chocolate chips

Now, this recipe also calls for a cream cheese frosting to go on top of the cookies. I didn’t add that, simply because I didn’t have any cream cheese. They are pretty good without the frosting. I’m sure if you added that they would be even better!

I followed the recipe exactly, but I’m sure you could substitue some things to make them a little healthier. Or, just forget about being healthy for a minute and make these cookies. After all, isn’t it the holiday season?!

End of September marks the Holiday season, right? Costco already has Christmas stuff out, so must be.

While making cookies, I watched The Biggest Loser.

(Ya, I need to clean my computer screen!)

I usually watch this show while cleaning or cooking. I feel a little more productive that way. What do you think of this season so far?? I haven’t finished the first episode yet, but seems good so far. Of course they had to put Anna in there ’cause she’s good lookin’.

Back to cookies —-

You must make them!

Come back here after you’re done and tell me if you liked them.

Don’t blame it on my when you gain 5 pounds, either.

  1. Gonna have to try your recipe. I love pumpkin choc chip cookies!! Our supermarket always rolls them out this time of year and I can eat a dz in one sitting. Scared to even venture into the bakery section right now… 🙂 I'm weak.

  2. Samantha,

I've been reading for a little while and wanted to stop being a creeper and introduce myself. My husband and I recently decided we are “ready” (or as ready as you ever can be) to try and have children. Since making that decision, I've enjoyed perusing different parenting blogs and reading about the joys and challenges of raising children. I love your writing style and hearing your parenting adventures–especially your take on nutrition/fitness. I'm a fellow Beaver and finished my grad degree at OSU last year (I desperately miss Corvallis!).

The cookies look delicious! I love all things pumpkin (especially pumpkin cake with cream cheese frosting… yum!). Thanks for sharing!

    Sarah

  3. An easy way to make the same cookies (and a little healthier) 1 box Spice cake mix, 2 cups pumpkin puree (I puree mine in the fall and then freeze it for all year), and a bag of chocolate chips. SO yummy!
